Most egg powder is made at temperatures above 390°F, hot enough to change the proteins before they are packaged. That number explains a lot about why some powdered eggs taste flat, cook oddly, or lean on additives to feel like eggs at all.
Egg white proteins are delicate. Research shows they begin to undergo irreversible aggregation above roughly 149°F, which can affect their functional properties during processing. At 390°F air drying temperature, the egg is pushed far past that point.
During conventional spray drying, liquid egg is atomized into tiny droplets and introduced into a stream of very hot air. Moisture evaporates rapidly. As that moisture disappears, however, particle temperatures rise, and heat exposure alters the structure of egg proteins permanently.
Research has shown that spray-drying conditions can affect properties such as foaming, emulsification, gel texture, viscosity, and other functional characteristics of egg powder. For a product as functionally complex as an egg, those changes matter.
The finished powder may still be egg, but it may not behave exactly like the egg that entered the dryer.
Some powdered egg products also contain added flavors, gums, starches, or other ingredients to modify flavor, texture, or functionality. OvaEasy takes a different approach: preserve as much of the original egg as possible during drying so those additions aren't necessary.

Instead of relying solely on conventional high-temperature spray drying, OvaEasy uses a proprietary low-temperature crystallization process designed specifically for eggs.
