    How Are Powdered Eggs Made?

    Our freeze-dried eggs follow a unique, proprietary process from fresh shell egg to long-lasting egg powder with minimal flavor loss along the way. We’ve found high temperatures (upwards of 390 degrees) to be detrimental to egg taste and texture, as cooking the egg at high heat denatures the protein found in eggs. Our one-of-a-kind low-temperature freeze drying process cuts cooking temperatures by more than half so our ready-made powdered egg products don’t lose the quality of the whole egg. Instead of traditional freeze-drying, we put our own spin on it, using a two step heat then vacuum process to suck out any moisture without exposing the egg to more drastic temperatures.
